Abstract
Cilj ovog rada je opisati implementaciju HACCP sustava, njegovu povijest i razvoj. HACCP sustav je sustav upravljanja sigurnošću hrane. Nastao je prije 40 godina na pilot projektu za astronaute. S obzirom na sve veći turistički razvoj u RH i sve veći broj ugostiteljskih objekata koji vrše usluge posluživanja hrane, sve je veća potreba za uvađanje sustava kontrole hrane. Sustav kvalitete je danas postao važan dio svake organizacije koja se bavi proizvodnjom i preradom hrane. U radu je opisana analiza opasnosti, određivanje kritičnih točaka (KKT). U Hrvatskoj je HACCP sustav primijenjen od 1.siječnja 2009.
Abstract (english)
The goal of this paper is to explain the implementation of the HACCP system, its history and development. The HACCP system is a food safety management system. It was created 40 years ago on pilot project for astronauts. Given the growing tourism development in the Republic of Croatia and the growing number of catering facilities that provide food service, there is a growing need to introduce a food control system. The quality system today became an important part of any organization engaged in food production and processing. The paper describes hazard analysis, determination of critical points (CCP). In Croatia, the HACCP system has been implemented since January 1, 2009.
